Never Boil Corn Again!

Want to know the easiest way to cook corn on the cob?

Throw it in the oven at 180oC (350oF) for 25-30 minutes.


That's it.  Leave the husk on, it will trap in the moisture, leaving you with juicy, tender corn.  The husk and silk will peel away easily once it's cooked.  Cut off the large end and it slides right out with no silk.

Perfect Poached Eggs

Preparation time : 10 minutes


Poached eggs are easy once you know how.

Cooking Directions

  • Cook 1 or 2 eggs per person.
  • Fill a saucepan or deep frying pan with about 5 - 10cm of water and add a splash of white vinegar (helps the egg keep it's shape).
  • Bring the water to a gentle simmer.
  • One at a time, break the eggs into a saucer or shallow cup and slide the egg into the water.
  • As soon as the water starts simmering again, turn off the heat and cover the saucepan with a lid.
  • Stand for about 2 minutes, or until the white is firm.  If you like a firm yolk rather than a runny yolk, leave for about 5 minutes.
  • Lift the eggs our of the water with a slotted spoon.  Drain well and pat dry with a paper towel.
  • Serve on wholegrain toast with freshly ground black pepper.

Tips

For best results use fresh eggs as older eggs have too much water content.

Use eggs that are at room temperature.  Eggs that come straight from the fridge are too cold and are more likely to spread in the water before holding their shape.  If you keep your eggs in the fridge, try placing them in warm water for a few minutes before you use them.

Bacon Double Cheese Burger Dip


A hot cheesy baked dip with all of the flavours of a bacon double cheese burger that makes for some great game day snacking!

Servings : makes 4+ servings

Prep Time : 10 minutes
Cook Time : 50 minutes
Total Time : 1 hour

Ingredients :
  • 1/2 pound (250g) ground beef
  • 6 strips bacon, cut into 1 inch pieces
  • 1 small onion, diced
  • 1 clove garlic, chopped
  • 4 ounces (100g) cream cheese, room temperature
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/2 cup mozzarella, shredded
  • 1/2 cup cheddar cheese, shredded
  • 1 Tbsp Worcestershire sauce
  • 2 Tbsp ketchup


Directions

Step 1
Cook the ground beef in a pan over medium heat, set aside and drain the grease from the pan.

Step 2
Cook the bacon in the pan until crispy, about 6 - 10 minutes, set aside and drain all but a tablespoon of the grease.

Step 3
Add the onion and sauté until tender, about 5 - 7 minutes.

Step 4
Add the garlic and sauté until fragrant, about a minute.

Step 5
Mix the ground beef, bacon, onions and garlic, cream cheese, sour cream, mayonnaise, mozzarella, cheddar, Worcestershire sauce and ketchup and pour it into a baking dish.

Step 6
Bake in a pre-heated 350oF (180oC) oven until the top starts turning a light golden brown and the sides are bubbling, about 20 - 30 minutes.

If you cannot live without lettuce and tomatoes in your burgers then topping the hot bacon double cheese burger dip with freshly diced juicy tomatoes and sliced crisp lettuce is the way to go and I highly recommend that you try it!







This bacon double cheese burger dip goes great on toasted baguette slices or with tortilla chips for your dipping pleasure.

Best Ever Potato Salad


Servings : 14

Prep Time : 20 minutes
Cook Time : 20 minutes
Extra Time : 1 hour 20 minutes

Ingredients :
  • 2kg desiree potatoes
  • 440g whole egg mayonnaise (recommend 400ml ETA Potato Salad dressing)
  • 6 eggs
  • Bunch of spring onions
  • 8 rashers short cut rind-less bacon
  • 1 1/2 tsp onion salt
  • 1 Tbsp garlic powder

Method


Step 1
Hard boil the eggs by placing in a pot, cover with salted tap water and bring to boiling. Turn off the heat, cover and let sit for 17 minutes. Cool under running water, crack all over and leave in fridge covered with cold water for an hour to cool. They should be easy to peel now. Cut into quarters.

Step 2
Meanwhile peel potatoes if you wish but the salad works just as well un-peeled. Dice the potatoes into 3cm cubes and place in a large pot and cover with salted tap water. Bring to boil and cook for approximately 10 minutes, check regularly, the potatoes should be just cooked, not falling apart. Drain and refrigerate for 2 hours (very important). This helps to stop the potatoes from falling apart when mixing in the rest of the ingredients.

Step 3
Chop spring onions into 5mm pieces, do not use the dark green part of the onion.

Step 4
Fry bacon quickly over high heat so it is browned but not too crispy. Drain on paper towel and slice into thin strips.

Step 5
Mix together the mayonnaise, onion salt and garlic powder and mix through with the potatoes, eggs, spring onions and bacon.

Step 6
Lasts for a few days in the fridge so you can prepare the salad in advance and tastes even better once all the flavours are infused together!  I highly recommend making this the night before it is needed.

Pasta One Pan Dinner



This is an easy to make recipe that we use on a regular basis.  Everything goes into the one pan and is cooked together saving time and causing less dishes for us to wash.

Portions : 4

Ingredients :
  • 1 Tbsp oil
  • 500g lean beef mince
  • 1 onion, peeled and chopped
  • 1 tsp minced garlic
  • 500g jar Grilled Summer Vegetable Pasta Sauce
    (the Five Brothers Grilled Summer Vegetable Pasta Sauce is our favourite)
  • 1 1/2 cans of water, beef stock or red wine
  • 2 cups of small pasta spirals
  • 2 cups of frozen mixed vegetables (peas, carrots & corn)
  • salt and pepper to season
  • chopped parsley (optional)

Method

Step 1
Heat the oil in a large frying pan and quickly brown minced beef and onion over a moderately high heat, breaking up the mince with the back of the spoon as it browns.  This may be best done in two batches.

Step 2
Add the garlic, Grilled Summber Vegetable Pasta Sauce, water or stock or wine and pasta and stir until the mixture comes to the boil.  Cover, lower the heat and simmer for 15 minutes until the mince and pasta are tender.

Step 3
Stir in the frozen mixed vegetables and simmer gently for only 3 - 5 minutes until the vegetables are hot.  Season with salt and pepper and add a handful of chopped parsley if desired.

Healthy Hamburger Patty Recipe

 

This is a very popular and very flavourful beef patty that we make for all of our barbecues.

Time to make : 30 minutes
Portions : 6

Ingredients :
  • 500g lean beef mince
  • 1 carrot, grated
  • 1 onion, finely chopped
  • 1 tsp garlic or onion salt
  • 1 Tbsp Worcestershire sauce
  • 1/2 cup rolled oats

Place all of the ingredients into a bowl.

Mix with clean hands and divide into 6 lots.

Press each lot into a saucer to make a patty, or shape patty with your hands.
